Episode 006 - Chilli Pepper

Juliet and Chelsea and get spicy when discussing chili peppers on the sixth episode of Elder Hour! They trace the chili pepper's history back to its indigenous roots, talk trickster spirits, and discuss the morality of hexing.




Vegetarian Italian Stuffed Peppers

4 cubanelle or 8 banana peppers

2 field roast italian vegetarian sausages

½ sweet online

2 cloves of garlic

½ lb sliced provolone cheese

15 oz of pasta sauce

1 large tomato

Fresh basil

Olive oil

Salt & Pepper

2 tbspWhite wine vinegar

Preheat oven to 350. Start by dicing onion and tomato. Mince garlic. Roughly chop sausages into small pieces. Half peppers and core seeds. Chop basil. Place peppers on a baking sheet and drizzle both sides with olive oil and sprinkle with salt and pepper. Bake open side up on top shelf for about 7-10 minutes to soften the peppers.

With a large drizzle of oil in a large frying pan add garlic and onion until fragrant about 30 seconds to a minute. Cook sausage on medium high heat for 10-15 minutes until it reaches the desired texture. Add tomatoes and reduce heat to medium. Add two tablespoons of white wine vinegar. Continue to cook about 5 minutes until tomatoes are softened. Once the tomatoes have softened add the tomato to the pan and let simmer for 5 minutes.

Set the oven to broil. Stuff peppers with sausage and onion mixture. Place slices of provolone over the stuffed peppers. Place back in the oven on the top shelf and broil 1-3 minutes until cheese is slightly crispy. Be careful on this step because it can quickly burn under the broiler.
